Nilem fish (Osteochilus hasselti) are freshwater fish native to Indonesia that live in riversand swamps.
The aim of this study is to figure out how much nilem fish protein concentrate to add to the preferred amount of cakwe. The study employs a nonfactorial Fully Randomized Design (CRD) with four treatment levels: 0% or no addition of nilem fish protein concentrate, 2.5 percent addition of nilem fish protein concentrate, 5% addition of nilem fish protein concentrate, and 7.5 percent addition of nilem fish protein concentrate.Organoleptic parameters such as colour, scent, texture, and taste are evaluated by a panel of 20 semi-trained panellists. The outcomes revealedconsumers prefer cakwe with 5% nilem fish protein concentrate because of its organoleptic qualities (color 6.9, aroma 7.3, texture 6.5, and taste 7.3).
