GC-MS Characterization of Unsweetened and Sweetened “Kunun-zaki” Beverage and Pulp | Asian Food ...

The aim of this study was to use GC-MS to classify unsweetened and sweetened “kunun-zaki” drink/pulp. Unsweetened “kunun-zaki” drink, sweetened “kununzaki” drink, unsweetened “kunun-zaki” pulp, and sweetened “kunun-zaki” pulp were the four experimental types, respectively. Department of Biochemistry, Federal University of Lafia, Nasarawa State, and the Central Diagnostic and Research Laboratory, Ilorin, Nigeria are the places where I studied.Sorting, drying, soaking, decanting, washing, milling, gelatinization, fermentation, and sieving were all part of the process. Millet, sorghum, soybean, dried sweet potatoes, germinated rice, ginger, and cloves were used to make the unsweetened “kununzaki” beverage. The sweetened variety was made in the same way, but with the addition of dried dates. The pulp remained after sieving to extract the "kunun-zaki" beverage. The essential oils and fatty acids were extracted using hydrodistillation and the Soxhlet apparatus, respectively. The samples' fatty acid methyl esters were then analysed using GC-MS. The GC chromatogram revealed three constituents in the unsweetened "kunun-zaki" beverage. 9,12-octadecadienenoic acid (z,)- (73.36 percent ) and nhexadecanoic acid were the most abundant constituents (19.31 percent ). In a sweetened "kununzaki" drink, eleven compounds were discovered. The most abundant was 9, 12octadecadienoic acid (Z,Z) at 54.062 percent, followed by n-hexadecanoic acid at n-hexadecanoic acid at n-hexadecanoic acid at n hexadecanoic acid at nhexadecanoic acid at (17.278 percent ). In unsweetened “kunun-zaki” pulp, twenty-one peaks corresponding to eighteen compounds were discovered.

Gingerol (20.262%), 1H-3a,7-methanoazulene,2,3,4,7,8,8a-hexahydro-3,6,8,8-teramethyl-,[3R-(3,3a,7,8a)]- (19.925%), 2-Butanone,4-(4-hydroxy-3-methoxyphenyl)- (15.59%), and 2-Butanone,4-(4-hydroxy-3-methoxypheny 10.977 percent Four compounds were found in sweetened “kunun-zaki” pulp. The most abundant compounds are 9,12-octadecadienoic acid (z,z)- (68.664%), n-hexadecanoic acid (18.654%), and oleic acid (18.654%). (10.199 percent ).

Conclusion: Both samples had a healthy fatty acid profile for various health conditions, according to the findings. Bioactivities with major health benefits were found in other components. This research discovered compounds that support the medicinal claims of "kunun-zaki." This is the first time GC-MS profiling of “kunun-zaki” pieces has been recorded.
