The Proximate Analysis of Cakwe with Addition of Nilem Fish Protein Concentrate | Asian Journal of F
Nilem fish (Osteochilus hasselti) are indigenous Indonesian fish that live in rivers and swamps, such as freshwater. With the addition of nilem fish protein concentrate, this study aims to obtain the composition of proximate cakwe. Using the Association of Official Analytical Chemists (AOAC) process, the proximate parameters observed were water content, protein content, fat content and ash content. This study was carried out at the Fishery Product Processing Laboratory, Faculty of Fisheries and Marine Sciences, Padjadjaran University and Chemistry Research Laboratory, PPBS, University of Padjadjaran, from March 2019 to January 2020. The method used is an experimental method for the treatment of 5 percent concentrated nilem fish protein. Cakwe contained 27.72 percent water content, 10.42 percent protein content, 5.36 percent fat content, and 4.38 percent ash content with the addition of nilem fish protein concentrate, the next test results showed.
